Thirty Sauces

One bowl, thirty days, never the same meal twice. The base stays constant — greens, grain, protein, color. The sauce is what changes everything.

How to Use These

Every sauce makes roughly one cup, keeps 5–7 days refrigerated, and takes under five minutes. Most need nothing but a jar and a whisk; the ones that need a blender say so.

Make two on Sunday — one creamy, one bright. That covers seven days without repeating a flavor. Then rotate to two new ones next week. By day thirty you'll know which six you actually love, and those become your permanent rotation.

Four rules that make any sauce work

Creamy

Rich and coating, with no dairy anywhere. Tahini and avocado do the work.

Classic Lemon Tahini

⅓ cup tahini · ¼ cup lemon · 2 garlic, grated · ½ tsp salt · 4–6 tbsp warm water

Technique: whisk tahini and lemon alone first. It will seize into a stiff paste and look ruined — that's the emulsion forming. Add water a spoonful at a time and it turns silky.
Pairs: everything. The default.

Avocado Lime Crema

½ avocado · 3 tbsp lime · 1 garlic · 2 tbsp EVOO · ½ tsp salt · ⅓ cup water

Blender. Eat within two days — it browns. Press plastic wrap directly on the surface to slow it.
Pairs: shrimp, peppers, cabbage, quinoa.

Toasted Walnut Cream

⅓ cup walnuts · 2 garlic · 3 tbsp lemon · 3 tbsp EVOO · ½ tsp salt · 3 tbsp water

Technique: dry-toast the walnuts in a skillet 4 minutes until they smell nutty. That single step doubles the flavor. Blend warm.
Pairs: chard, salmon, sweet potato.

Almond Ginger Butter

3 tbsp almond butter · 1 tbsp grated ginger · 2 tbsp lime · 1 tbsp tamari · 1 tsp ACV · 4 tbsp warm water

Technique: grate the ginger on a microplane — chopped ginger leaves fibrous strings. Warm water loosens the nut butter.
Pairs: cabbage, edamame, tempeh, cucumber.

Cucumber Tahini

¼ cup tahini · ½ cucumber, grated & squeezed dry · 2 tbsp lemon · 1 garlic · 1 tbsp dill · ½ tsp salt

Technique: squeeze the grated cucumber hard in a towel first, or the sauce turns watery in an hour.
Pairs: salmon, quinoa, roasted peppers. Cooling against anything spicy.

Bright & Acidic

Thin, sharp, and cutting. These wake up a heavy bowl.

Apple Cider Shallot

3 tbsp ACV · 1 shallot, minced · ⅓ cup EVOO · 1 tsp dijon · ½ tsp salt · pinch black pepper

Technique: let the shallot sit in the vinegar 10 minutes before adding oil — it takes the raw bite off and softens the texture.
Pairs: greens, chard, roasted vegetables.

Kimchi Brine Vinaigrette

3 tbsp kimchi juice · 3 tbsp EVOO · 1 tsp rice vinegar · 1 garlic, grated

Free sauce. That brine was headed for the drain and it carries both the flavor and live cultures.
Pairs: quinoa, cucumber, tofu, shrimp.

Sauerkraut Dijon

3 tbsp kraut brine · 1 tbsp dijon · 3 tbsp EVOO · 1 garlic · pinch pepper

Technique: the mustard is the emulsifier — whisk it with the brine before the oil goes in and it won't separate.
Pairs: cabbage, chard, salmon.

Triple Citrus Garlic

2 tbsp lemon · 2 tbsp lime · 1 tsp zest from either · 3 garlic · ⅓ cup EVOO · ½ tsp salt

Technique: the zest is where the aromatic oil lives — the juice alone is only sour. Zest before you cut.
Pairs: shrimp, greens, quinoa. Best iron-absorption sauce on the list.

Ginger Rice Vinegar Splash

2 tbsp rice vinegar · 1 tbsp grated ginger · 1 tbsp tamari · 2 tbsp EVOO · 1 tsp sesame oil · 1 tsp honey

Technique: sesame oil is a finisher, not a base — a teaspoon perfumes the whole jar. More turns it bitter.
Pairs: edamame, cabbage, cucumber, shiitake.

Berry

The ones nobody expects. Berry + acid + fat + salt is a real technique — and it puts the antioxidants in the meal instead of on the side.

Blackberry Balsamic

⅓ cup blackberries · 2 tbsp balsamic · 3 tbsp EVOO · 1 garlic · ½ tsp salt · ¼ tsp black pepper

Technique: mash the berries with a fork and let them sit in the vinegar 5 minutes before whisking in oil. Strain the seeds if you want it smooth.
Pairs: salmon, chard, walnuts, roasted sweet potato.

Blueberry Ginger

⅓ cup blueberries · 1 tbsp grated ginger · 2 tbsp lime · 3 tbsp EVOO · 1 tsp ACV · ½ tsp salt

Blender. Comes out deep purple and looks like nothing else on the table. The ginger heat against the sweet berry is the whole trick.
Pairs: shrimp, spinach, quinoa, almonds.

Raspberry Cider Shrub

⅓ cup raspberries · 3 tbsp ACV · 3 tbsp EVOO · 1 shallot · ½ tsp salt · 1 tsp honey

Technique: a "shrub" is just fruit steeped in vinegar. Mash and let it sit 15 minutes if you can — it gets noticeably better.
Pairs: greens, pecans, tempeh, cucumber.

Blueberry Miso Glaze

⅓ cup blueberries · 1 tbsp white miso · 1 tbsp rice vinegar · 2 tbsp EVOO · 1 tsp ginger · 1 tsp tamari

The sleeper. Sweet fruit against salty fermented soy is the same logic as a good barbecue sauce — it just sounds strange until you taste it.
Pairs: salmon, tempeh, shiitake, broccoli.

Berry Chimichurri

¼ cup raspberries · ¾ cup parsley · 2 garlic · 2 tbsp red wine vinegar · ⅓ cup EVOO · ½ tsp red pepper flakes · ½ tsp salt

Technique: chop the herbs by hand and fold the crushed berries in at the end — don't blend, or you lose the texture that makes chimichurri work.
Pairs: salmon, tempeh, roasted peppers.

Umami & Deep

Savory and meaty without meat. These are what you reach for when a plant bowl feels like it's missing something.

Shiitake Umami

4 oz shiitake, chopped fine · 2 garlic · 3 tbsp EVOO · 1 tbsp tamari · 1 tbsp lemon

Technique: brown the mushrooms hard — dry pan first to drive off water, then oil. Undercooked mushrooms are rubber; deeply browned ones taste like steak. Stir the rest in off heat.
Pairs: the fix for any bowl that tastes flat.

Miso Ginger Tahini

3 tbsp tahini · 1 tbsp white miso · 1 tbsp ginger · 2 tbsp rice vinegar · 1 tsp sesame oil · 4 tbsp water

Technique: never boil miso — heat kills the live cultures. Cold or warm only.
Pairs: edamame, broccoli, quinoa, cabbage.

Charred Scallion Soy

4 scallions, charred & sliced · 2 tbsp tamari · 2 tbsp EVOO · 1 tbsp rice vinegar · 1 garlic · 1 tsp sesame oil

Technique: blacken the scallions in a dry cast iron until spotted, then chop. The char is the whole point — smoke without a grill.
Pairs: tofu, shrimp, quinoa, greens.

Smoky Almond Romesco

1 roasted red pepper · ⅓ cup almonds · 1 garlic · 1 tbsp red wine vinegar · 1 tsp smoked paprika · 3 tbsp EVOO · ½ tsp salt

Blender. Thick, smoky, tastes far more indulgent than it is. Keeps a full week and gets better on day two.
Pairs: salmon, broccoli, quinoa, greens.

Roasted Garlic Vinaigrette

1 whole head roasted garlic · 3 tbsp ACV · ⅓ cup EVOO · 1 tsp dijon · ½ tsp salt · pinch pepper

Technique: cut the top off a head, oil it, wrap in foil, 400°F for 40 minutes. Squeeze the cloves out like paste. Roast three heads at once — they keep two weeks.
Pairs: everything. Sweet and mellow, zero harshness.

Herb

Green, fresh, and loud. Herbs count toward your weekly plant species — these are the cheapest way to raise that number.

Green Herb Oil

1 cup parsley or cilantro · 2 garlic · 3 tbsp lemon · ⅓ cup EVOO · ½ tsp red pepper flakes · ½ tsp salt

Technique: use the stems — parsley and cilantro stems carry more flavor than the leaves and you're throwing them away.
Pairs: shrimp, tempeh, roasted vegetables.

Classic Chimichurri

1 cup parsley · 2 tbsp oregano · 3 garlic · 3 tbsp red wine vinegar · ⅓ cup EVOO · ½ tsp flakes · ½ tsp salt

Technique: hand-chopped only. A blender turns it into green paste and loses the texture entirely. Better after an hour.
Pairs: salmon, tempeh, sweet potato.

Mint Lime Tahini

¼ cup tahini · ½ cup mint · 3 tbsp lime · 1 garlic · ½ tsp salt · 4 tbsp water

Blender. Mint reads as dessert to most people — with tahini and lime it goes completely savory and cooling.
Pairs: cucumber, chickpeas, shrimp, quinoa.

Basil Walnut Pesto

2 cups basil · ⅓ cup walnuts · 2 garlic · 2 tbsp lemon · ⅓ cup EVOO · ½ tsp salt · 2 tbsp nutritional yeast (optional)

Technique: walnuts instead of pine nuts — cheaper, more omega-3, slightly more bitter in a good way. Nutritional yeast replaces the parmesan.
Pairs: quinoa, tomatoes, salmon, broccoli.

Dill Cucumber Ranch

¼ cup tahini · 3 tbsp dill · 2 tbsp lemon · 1 tbsp ACV · 1 garlic · 1 tsp onion powder · ½ tsp salt · 4 tbsp water

The ranch replacement. Hits the same note without buttermilk or seed oils. Onion powder is doing more work here than it looks.
Pairs: raw vegetables, cabbage, shrimp. The one to feed skeptics.

Spiced & Warm

Heat, earth, and warmth. Where the anti-inflammatory spices earn their keep.

Golden Turmeric Tahini

⅓ cup tahini · 3 tbsp lemon · 1 tsp turmeric · ½ tsp cumin · pinch black pepper · ½ tsp salt · 5 tbsp water

The pepper isn't optional — piperine sharply increases curcumin absorption. Without it you're mostly eating yellow.
Pairs: sweet potato, broccoli, chickpeas, cauliflower.

Ginger Turmeric Fire

2 tbsp grated ginger · 1 tsp turmeric · 3 tbsp ACV · 3 tbsp EVOO · 1 garlic · ½ tsp flakes · pinch pepper · 1 tsp honey

Technique: thin and sharp rather than creamy — meant to be splashed, not spooned. Turmeric stains everything, so use a glass jar.
Pairs: greens, shrimp, quinoa, sweet potato.

Cumin Coriander Lemon

1 tsp cumin · 1 tsp coriander · 3 tbsp lemon · ⅓ cup EVOO · 2 garlic · ½ tsp salt · pinch cayenne

Technique: toast the whole spices in a dry pan 60 seconds and crush them, if you have them whole. It's a completely different sauce than pre-ground.
Pairs: chickpeas, hummus, greens, tempeh.

Harissa-Style Red Pepper

2 roasted red peppers · 2 garlic · 1 tsp cumin · 1 tsp smoked paprika · 1 tsp flakes · 2 tbsp lemon · 3 tbsp EVOO · ½ tsp salt

Blender. Adjust the flakes to your heat tolerance — it should be warm, not punishing. Freezes well in an ice cube tray.
Pairs: shrimp, quinoa, roasted vegetables, eggs.

Garlic Chili Crisp

6 garlic cloves, sliced thin · ⅓ cup EVOO · 1 tbsp flakes · 1 tsp sesame seeds · ½ tsp salt · 1 tsp tamari

Technique: warm the oil gently with the garlic over LOW heat until pale gold, then pull it off immediately — it keeps cooking in the hot oil and burnt garlic is bitter and unfixable. Pour over the flakes.
Pairs: spoon over anything. Keeps two weeks.
